As a child I used to love cream soda floats….Whenever we were at a restaurant I would order one. As I grew up though, I realised that:
- Cream soda is a sugar-filled, nutritionally pointless drink
- Dairy ice cream is very high in cholesterol – a problem which my whole family struggles with due to a genetic defect
So I stopped having it regularly:( But then! I discovered this wonderful, healthy coconut vanilla ice cream and started thinking of all the wonderful ways I could use it….I immediately thought of recreating my childhood favourite drink and since I had a ton of frozen watermelon in my freezer, I ended up with a deliciously healthy watermelon float!
Ingredients
- frozen watermelon
- ice water
- honey, maple syrup or agave
- coconut vanilla ice cream
Instructions
Place frozen watermelon into you food processor and pulse until chopped into smaller pieces. Now process, scraping intermittently, until you have a drinkable icy watermelon slushy. Add small amounts of water at a time while processing to help you achieve a thinner texture. Add sweetener to taste. Pour into a glass and plop a big blob of coconut vanilla ice cream on top.

January 29, 2014 at 10:45 am (7 years ago)Great idea! Both the ice cream and watermelon keep well when frozen for months – so why not?!If the ice cream is a little hard when you take it out of the freezer, just zap it in the microwave for 15 secs at a time until it is scoopable:)
