    Dear Dr T

    All sounds good. I will try with greater effort to improve my diet, though, I love my cheese and will battle to be vegan.

    I tried a soup last night, by chance. Spicey butternut you may like to consider:
    half a butter nut chopped or medium size
    2 large carrots
    half an onion
    one clove of garlie
    about the same amount of ginger grated
    seasoning, my own mix that includes herbs, dried chilli and aromat.
    I also added half a packet of white onion soup. You can substitute of course.

    Sear then simmer with a dash of olive oil. After about 20 minutes add a litre or so of water, depending on the texture you like. I blended and it was really great. Salt to taste too.

    Let me know what you think. The ginger made it quite hot but really nice. You can reduce the quantity to your taste.

      Thanks for stopping by:) The soup sounds wonderful – I love butternut and ginger so I’m sure I will like it. I’ll definitely give it a try – thanks for the recipe!
