Whip up this protein packed, superfood pizza base in a few minutes and enjoy it topped with a variety of your favourite veggie toppings!
- 3/4 of a cup of quinoa (soaked for 7-8 hours)
- 1 teaspoon of apple cider vinegar
- Salt to taste
- Herbs/spices as preferred. I use 1/2 teaspoon each of origanum, sweet basil, thyme and rosemary. Garlic lovers may want to add a clove of garlic to the mix:)
- 1/4 teaspoon cayenne pepper or chilli powder
Preheat oven to 180°C and grease a pizza dish. (I didn’t have a round pizza dish so I used a square glass dish.) Drain quinoa of excess water and place all of above ingredients into a food processor. Process, repeatedly scraping down the sides, until it looks like a relatively smooth batter. Pour the batter into the prepared dish and bake until base is set – usually about 15-20 minutes.
Load with topping of choice and bake until topping is warmed through.
My favourite topping combo is roasted garlic cloves, thinly sliced banana, baby roma tomatoes, and mushrooms sauteed with thyme. You will notice my pizza is drizzled with delicious home-made vegan tofu cheese! The recipe will be posted soon:)
