Healthy Frozen Chocolate Fudge Bars

Homemade almond milk is a staple in the kitchen of many vegans, but what do you do with the almond pulp?  There are many options, such as adding it to cereals, using it in baking, but this is one of my favourite ways to get rid of it.

Such a yummy, healthy chocolatey treat which you just blitz together in your food processor.  This is how.

I press this batter firmly into the base of a silicone loaf pan and pop it into the freezer to set overnight.  The next morning, while in the loaf pan, I carefully slice it into strips and wrap it in foil.  I pop the foil wrapped fudge into a pretty pink bag and back into the freezer it goes!  It lasts in the freezer for ages and you just remove one at a time and eat straight from frozen.  It stays soft and fudgey despite being frozen.

    Since we’re not doing the nut-milk-thing yet (will get there), we don’t have the pulp, so it was SUCH a treat getting these from you. They’re FABULOUS!!! Not too sweet, not too rich, cold, chocolaty, fudgy… just right for a snack. Berto likes, yai!!! Thx for spoiling us!!!! Great motivation to start making the milk…hehehe. Smooches
