This cake is spectacular….soft spongy chocolate cake drenched in a thick chocolatey custard…oh so good…
In addition, it is made with pretty much staple ingredients in any vegan kitchen and takes about 5 minutes to throw together. You can eat it straight from the oven, but I do feel that it tastes much richer and chocolatier the second day. The first time I made it and ate it immediately, I thought that it was good but not amazing. I put the leftovers in the fridge and just warmed it in the microwave for 30 seconds before eating with custard and I was blown away!
So why not whip it up the night before your guests come. Let it cool and wrap the dish with plastic wrap and let it chill in the fridge overnight. When your guests come the next day, pop individual portions briefly in the microwave to warm it up a bit and loosen the sauce (it gets pretty think when cold) and serve with sweet custard. Leftovers freeze brilliantly:) (ask my dad!)
